The volume presents the role of Nuclear Magnetic Resonance (NMR) and Isotope Ratio Mass Spectometry (IRMS) techniques in assessing the quality and traceability of food in terms of characterizing the place and the production method. Indeed, these innovative techniques, characterized by reduced sample management and rapid acquisition of information, in combination with appropriate statistical treatments, are discussed in terms of advantages over the classic ones.
